building my project and would like to use MME paddles only (no gear selector ) can i wire a button to activate neutral ?

you can, just connect only the paddles, if the TCU does not detect the Selector after CAN bus, the way the paddles work changes automatically

how will the paddels work without can shifter ?
how do you chose reverse/neutral/drive?

You can downshift into neutral when standing and then you can select reverse with quick double pressing minus on the paddles.
